![]() ![]() ![]() When we focus on very specific details or on a single nutrient we often forget to think about it in the bigger picture. ![]() While our understanding of specific details is impressive I think that a wider view is more important for overall health. Each new discovery is as important as the last as it gives us more knowledge of a particular nutrient or action within the body. Research teams are constantly making discoveries about new substances in food. This detailed focus by scientists has led to some fantastic discoveries about nutrients and today we have a better understanding of how food affects the body than ever before. ![]() Over the last 150 years we have learnt so much about the inner workings of food. Unfortunately I think some of the blame for this is due to the way we look at food. In 2007 the US spent $2.1 trillion on medical care, and the estimate is that 75% of this was on diseases that could have been prevented. Most of the major causes of death like heart disease, cancer, stroke, respiratory disease, diabetes, and Alzheimer’s disease, are diseases that are preventable. It is therefore rather ironic that despite this new vigour for eating and being ‘healthy’ rates of obesity and chronic disease are rising. Today more than ever people are focusing on health and diet. ![]()
